Here's a (slightly) healthier twist to Mabo Tofu: Try using ground turkey instead of ground beef, and add a shredded carrot, both for all that carroty goodness and for the eye: Doesn't everything look better with orange? (Okay, maybe not everything.)
We have to do a little disclosure here and say we usually pull a Sandra Dee with our Mabo and make it semi-homemade. We use House Foods' Chinese Mabo Tofu Sauce--we're busy parents! Anyway, you can kick up the flavor by sauteeing your ground turkey with a couple of gloves of garlic, and of course garnish, garnish, garnish with some fresh-cut green onions.
Yuri's been keeping the ends of the scallions in water, and those suckers regrow like the Dickens. I think green onions might be able to solve the world's energy problems.
